Method
1. Bloom the gelatinCombine 1 tablespoon of gelatin with ½ cup of water in a microwave-safe bowl.Let it sit for 5 minutes.Microwave until it turns liquid. This usually takes less than 1 minute, but microwaves vary, so keep a close eye on it. Overheating can ruin the gelatin.Stir well so everything is fully combined.

Do I need a mixer?
Yes, a hand mixer or stand mixer is a must. The texture depends on whipping a lot of air in, and doing it by hand isn’t practical.
Why did my gelatin go lumpy or stringy?
It was probably overheated or added when too cold. Heat it just until liquid, then stir and add it while still warm.
Why isn’t my honey turning white?
Keep whipping. It turns from yellow to a pale, creamy white as it takes in air, which can take several minutes.
How do I serve it?
Spoon it on top of an iced matcha latte, such as our Golden Matcha Ratio latte, and let it melt into the drink as you sip.
